Chargrilled Margarita Chicken Tacos

Prep Time: Overnight to 48 hours for marinate, Plus prep time for toppings

Cook Time: 10 mins on the BBQ plus rest time

Makes approx: 10-12 tacos (depending on the size of your chicken and how much you stuff your tacos!)



If you want to rock the BBQ this summer, serve up these zesty chargrilled margarita chicken tacos!! 🌮😎 The flavourful marinade packs a punch and does most of the work for you. These are always a crowd favourite and in fact, I will be cooking these bad boys on Boxing Day for some of my best mates. Don't forget the extra limes for your cervezas and margaritas! 🍻 Just add a nice sunset, some tunes and your favourite taco toppings and consider it an evening well spent!


Ingredients

• 4 chicken breasts, gently flattened to an even 1cm thickness


MARINADE

• 1 large shot (4 TB or 60ml) Tequila blanco

• 3TB (45ml) Olive oil

• 1 heaped TB runny honey

• 1 1/2 TB fav Mexican spice mix (we use @tiopablonz Mayan Gold)

• 1 t ground cumin

• 1 t chipotle powder (substitute sweet paprika for less heat)

• Zest of 2 large limes (substitute lemons if you must)

• 4 small garlic cloves, minced

• 1/2 t salt

• 1/2 t black pepper

• 1 large ziplock bag or container for marinating


DIY TACO/TOSTADA/SALAD

• Soft/hard taco shells or tostadas, or a mix

• Guacamole or sliced avocado

• Grated cheese

• Fresh salsa

• Sour cream (mix in a couple of dashes of chipotle hot sauce for some smokey heat)

• Fresh lime wedges

• Fresh coriander

• Thinly shredded iceberg lettuce or green cabbage

• OPTIONAL: Spicy refried beans, pickled jalapenos, black olives, hot sauce, chopped onions


Instructions



1. One or two days* before serving, combine all of the marinade ingredients in a large ziplock bag or a container large enough to marinate chicken breasts. Add the flattened chicken breasts and mix through the marinade. Marinate overnight in the refrigerator.


2. When you're nearly ready to cook, remove the marinated chicken from the refrigerator while you preheat your BBQ and prep all the toppings for your DIY tacos/tostadas. Place all of the toppings in a bowl with serving spoons so everyone can build their own taco, tostada or salad to their liking. Be creative and have fun with the toppings.


3. Grill the marinated chicken covered on a lined or well-oiled BBQ for about 4 to 5 minutes per side. Once cooked, remove the chargrilled chicken and allow to rest for about 5 minutes on a cutting board tented with foil. Slice chicken against the grain and place into a serving bowl with any leftover juices, add a squeeze of fresh lime juice, and serve while hot along with all of the toppings. Enjoy! 😎


*If you marinate the chicken in a vacuum-sealed bag, it will last for at least 5 days refrigerated if you're traveling these holidays.
